Baby Steps....


I walked around the back yard
2 separate times today :)
Still coughing like crazy.
No more Nyquil for me though....
I wake up feeling like
I was hit by a truck.
Hopefully
I won't cough my head off tonight.
I am still doing
Seattle....
I am beginning to fill up quickly now,
which is kind of nice

Sunday Morning .... May 26

- Served with whole-wheat bread and fresh fruit.



This was pretty good :)
The fruit was sliced pears....
very tasty !!!

I am getting ready for lunch and
today I am having:

                                                                                       FRESH CAESAR SALAD 
- Hearts of tender romaine, shredded cheese, almonds 
and Caesar dressing.
 Served with a zucchini muffin.



For dinner last night,
I had Stuffed Green Pepper,
and Cornbread.
Very delicious  !!!!

This stupid cough and cold is
making me very lazy,
so I am not
being as diligent about
blogging.

I DO feel psyched and energized !!!

Saturday Morning....


Yesterday was pretty good.
I had the 


                                                                                   ROASTED VEGETABLE WRAP 
- Mediterranean flatbread
 filled with roasted vegetables, 
served with sweet potato casserole 
and nut clusters.


That green stuff is guacamole which
I didn't use
blecch

For breakfast this morning
I had 
                                                                                       
                                                                                     HIGH-FIBER COLD CEREAL
- With dried fruit and nuts.


IT WAS DELICIOUS!!!!!

I was going to take a picture
but I ate it too fast 
:)

What I am really liking about 
Seattle Sutton
so far
is that the nuts that we get,
walnuts, pecans, etc
are roasted and very easy to eat.

Looking forward to lunch,
although I am pretty stuffed,
I think I will be having

                                                                                     TERIYAKI CHICKEN SANDWICH 
- A chilled marinated chicken fillet 
seasoned with tarragon, chives and parsley,
 served with a fresh baked bun 
and dessert.


We'll see
Tomorrow for our cookout
I will have Caesar Salad

Friday Morning.... May 24th

Dinner last night was very good :)
The salmon was delicious,
the couscous were (was) very flavorful and
the asparagus was not that bad.
I dipped them into the dill dip :)
Those green things 
I THINK was edamame.


This morning for breakfast
I had:

                                                                                   APPLE CINNAMON OATMEAL
- Served with seasonal fruit.



Here is my picture....




It was pretty good :)
Very filling.
The melon and pineapple
were ripe and flavorful.

Lunch to day is probably going to be this:




                                                                                               HERBED CHICKEN
- Delicious oven roasted, herbed chicken 
served with a side of vegetables 
and yogurt.

My Dinner For Tonight..... ( Looking ahead )


- A grilled salmon fillet 
on a bed of couscous
 topped with dill sauce, 
served with vegetables.




I am not a fan of asparagus.
I hope it won't be woody.
We'll see....

- A fresh, crisp salad served with 
a chilled vegetable sipper
 and cracker.


It was a little vinegary but
quite tasty.
I ate the pecans separately
for my dessert

BBQ ON TEXAS CRUST 

- Meaty BBQ with shredded cheese atop a tasty crust,
 served with crisp garden fresh carrots 
grapes.


I am going to save my salad lunch for tomorrow 
because Gary's Mom, Fred and Barb
are coming for lunch...

Dinner Tonight.... Tuesday, May 21


I decided that 
I am going to look at
the menu and
read the descriptions
BEFORE
I choose one of my meals....
That way,
I can 
"have a plan"

Since I made Spaghetti
for everyone tonight....
I have decided to have this:


TETRAZZINI

Ground turkey, 
sliced mushrooms 
and whole wheat pasta 
baked together in a light sauce, 
topped with Parmesan cheese and paprika. 
Served with roasted veggies 
and spiced apples.



Oh crap
That looks an awful lot like
breakfast
and
those vegetables better not
smell like vinegar 
or I will 
BARF





Dinner Last Night and Breakfast and Lunch Today.....



HOMESTYLE MEATLOAF 

Great tasting seasoned meatloaf with turkey meat and seasonings
 topped with tomato sauce and
 served with garlic whipped potatoes, 
cabbage 
(AAACCCHHHH!!!!!)
and cream style corn.

The cabbage was
sweet/sour and pickley
BLECCCHHHH
I ate half of it.
The meatloaf was very good

Breakfast This Morning:


SOUTHWESTERN FRITTATA

A frittata of fluffy eggs 
served with salsa 
and an English muffin 
with apricot fruit spread.


ya...
I already knew about the apricot fruit spread
It was ok
I am not a fan of 
Southwestern eggs.
Did you know that
they put corn in it?
they do
and something like sausage
but I ate it all and
I was grateful that
I wouldn't have to have that
cabbage again until
next month !!!


Lunch today was pretty good :)


ROBUST POTATO SKINS 

A lunch favorite. 
Potato skins with cheese sauce 
and a sour cream topping. 
Served with fruit
 and dessert

I had a COOKIE !!!!

Sunday , May 19th.... Breakfast and Lunch


BAKED FRENCH TOAST

With peach topping and nuts

pretty good :)
I seem to like the Breakfasts most of all


This was lunch :

TUSCAN MINESTRONE SOUP & SANDWICH 
-
 Delicious minestrone soup
 served with our homemade fruit spread and 
roasted nut spread to use on fresh baked wheat bread.

they did not mention
the disgusting little green apple 
that came with it 
I am proud to say,
I saved the peanut butter to eat with it.
I ate it all but
one slice :)

Dinner Saturday Night... Day # 5

MANICOTTI

Manicotti noodles stuffed with Ricotta cheese 
smothered in tomato sauce and 
sprinkled with aged Romano cheese, 
served with gourmet whole green beans.





It was very filling and
actually pretty tasty !!!

I am trying to eat my breakfast at 8am
lunch at 12pm
dinner at 5pm

It is working out pretty well for me.
I am drinking 4 glasses of water between
breakfast and lunch,
another 2 glasses between lunch and dinner
and 2 glasses between dinner and bedtime.

I am waking up between 3 and 5 times a night to pee
which is no problem because
I am able to get right back
to sleep.

I am hungry right now.
It is 20 to 9 pm.
Bedtime soon and then it 
won't be a problem.
I am determined :)

Gary has said he is proud of me a couple 
of times already !!!
YAY 
:)

I can't believe that tomorrow will be day # 6 .....
I am going to do this !!!

Chicken Salad and Grape Tomatoes


This Morning's Breakfast was and egg scramble
which wasn't too bad and
a whole grain roll with a tasty spread and
fresh melons and pineapple :)





The lunch that I just had was very tasty too :)
Macaroni and Cheese
Beets and a Crispy Flatbread sort of thing.
I am doing really well



I was really hungry before I went to bed last night 
but I did not cave !!!
I feel like this time I am going to do it

Day # 4 Plus Last Night's Dinner ......

This was my dinner from last night :

ACAPULCO TACO PIE
-
 Tomatoes, cheese and spices 
baked together on an authentic crust 
along with chips, salsa 
and crunchy corn salad.  



I will like it more
NEXT month.....

Becky tasted and
she said she felt sorry for me.
lol

I no longer eat for pleasure....
I eat for health and vitality 
:)
GO ME !!!!

Today is a new day and my breakfast was very very good !!!


CINNAMON RAISIN BREAD

with nut spread 
and tropical fruit.






I am a little concerned that my breakfast was 2 slices
and the picture shows only one.
That happened with another meal.
I am going to see if 
I am signed up for the
1200 calorie or the 2000 calorie....
no matter,
I just need to make sure I am getting
the right one .

I am still doing well with one cup of coffee a day.
That is HUGE for me 
so proud :)

I am drinking 8 glasses of water a day and
also taking my vitamins !!!

I woke up this morning at 635
I had to hurry and get Dad up before Sandra got here !!!
